Hey!  I’m Kimmi and I’m passionate about food; cooking it and eating it (especially eating it). I’m just a home cook, not a chef nor an expert by any means; I’m actually a nurse who loves food.  I currently live in Huntsville, Alabama and have lived in different cities in Maryland, North Carolina and Tennessee, always looking for the very best food I can find and/or cook.

The best way to learn how to eat new foods is to learn how to cook them. This way, you’re able to work with the food and observe it through the entire process of it becoming a meal. Huntsville’s food scene just got a little brighter with the opening of One Eleven Bar & Kitchen. Appropriately named as it is tucked into 111 Washington Street on the downtown square. Parking is predictably tricky (it always is in that part of town), but once you step inside, you forget all about circling the block. The space has a rustic, warm charm that feels both elevated and welcoming. Think upscale pub meets modern steakhouse. It’s cute!

The servers were friendly, though admittedly a little rushed, which is completely understandable given that the place is still in its early days and trying to master staffing and us foodies 🙂  That new restaurant energy was palpable, and it added to the excitement of the evening.

That was a lot about the “First Looks”… But I’m here for the food.

I started with the Yellowfin Crudo. Bless his heart, the server reinforced several times that it was raw. But as a sushi lover, I gathered in as much. It was delicious… light, fresh, and just the right balance of citrus and salt. It was the perfect prelude to the Crab Cake (I’m from Maryland, I’m always going to grab a Crab Cake), which leaned on the richer side, packed with flavor and less filler than most. Top 10 easy! But the star of the night? The Angry Prawns. They came out with a fiery kick – lol! But just the right amount of “angry” spice to make you pay attention without overwhelming the dish. Bold, balanced, and absolutely memorable. A simple wedge salad made an appearance as well (and was exactly that… a wedge is a wedge is a wedge, no frills needed). Drinks? Spot on. Their bar program has clearly been given some serious thought. It had equal parts Flare and Efficiency. Great combo for a busy restaurant.

What struck me most about One Eleven was its atmosphere: it manages to feel intimate without being stuffy, rustic without being country. This is the kind of spot that could easily become a downtown staple, especially once the staff settles into their rhythm and the regulars start claiming their favorite tables.

If you’re looking for an evening that feels just a little special, One Eleven is worth navigating downtown parking for 🙂

  • Always, wash your hands Before and After handling raw meat.
  • Never thaw meat on the counter, thaw in the refrigerator, microwave or cool water bath.
  • Always wash cutting boards and plates after having been in contact with raw meat.
  • Always cook to appropriate internal temperatures.  Safe internal temperatures vary based on cut.
  • Clean as you go. Makes cleaning up after cooking much easier.

The old cliche that “Food is Fuel” is true. Food is powerful in fueling the body and the soul. Really good food is intoxicating; and it’s as close as your own kitchen. How many times do you recall a moment in life based on the food that you were eating at the time. Many wonderful moments in time are with good food and good friends.

I am not a chef.  I love to cook and I love to eat (not necessarily in that order). This mini cookbook has 15 recipes that seem to go over very well and are super simple to make with lots of flavor. It’s not fancy, because I’m not fancy. I cook as a quite place to get my mind, body and soul on one accord and to provide a bonding moment for those who enjoy it.

That’s my hope, that these few recipes create a moment for you, whether it’s in the process of preparation or the activity of eating. I hope they inspire you to “shoot your shot” in the kitchen.
